Why Hindi PDFs are hard to convert
Devanagari letters combine into conjuncts, carry vowel signs (matras) above and below the line, and hang from a continuous top line. That breaks many simple OCR tools, which return missing matras or split words.

Fonts and old Hindi PDFs
Output is Unicode text, which works with Mangal, Nirmala UI and Noto Sans Devanagari. Older Hindi PDFs were often made with legacy fonts such as Kruti Dev or Chanakya.
